On this project it was clear that they needed a fan that would be up for the task for dealing with lots of smoke, grease & heat from the solid fuel chargrill. With the introduction of the revision in DW172 all solid fuel cooking should now require motor outside of the air stream. This is exactly what we offered, our Estoc Targe Powerbox has the motor outside of the air stream and can handle temperatures of up to 110°C.
A large air volume was also required of 8m3/s so the design was around using two fans in parallel running together to achieve the total air flow required. It was also noted the fans had to meet this criteria as the build up of CO2 within the kitchen was high so the fans needed to be reliable and give confidence that the kitchen staff would be protected from the emissions.
